Is there an option for you to be able to take 2 or 3 different forms of payment in one transaction?

No.  You just have to take partial payments with each form of payment.

I have one customer that always splits his monthly payment on 2 cards, so every month he has 2 transactions.

No option, you just have to ignore the pop-up that asks if you want to print a partial payment and go all the way out and back in again to take the next payment. One thing I always make sure to do is if they are going to split with card and cash, to take the card first, that way if it declines you don't have to deal with refunding the cash.
